Ingredients
Ingredients for cake base:
200g flour
6 eggs
180 g sugar
8 g baking powder
1 pinch salt
Ingredients for cream filling:
1 l cream
50 g sugar powder
30 g instant gelatine
300 g apple puree
4-5 g cinnamon
4-5 g gingerbread spice
raisins
675 g Odenwälder Marzipan paste
You also need:
Marzipan Christmas figurines for decoration (available in our online shop or self-made creations), set of food colorants (red, green, white), sugar decoration mixture (500 g sugar powder mixed with 130 – 150 ml water, optionally coloured with food colorants), toothpicks.
Preparation
Put the eggs in a mixing bowl and add sugar and the pinch of salt.
Beat until foamy for approx. 10 minutes.
Slowly fold in the flour through a sieve.
Pour the batter into a cake pan (28cms) and flatten it.
Bake for 35 min. at 175°C.
Check with a wooden skewer. No batter = OK!
Let it rest to cool, then release from the cake pan and cut it into three equal slices.
Whip the cream.
Fold in the gelatine.
Then fold in 100g of the apple puree and stir gently.
Add the spices and stir.
Roll out two sheets of Marzipan paste (50 g each) and cut out with the cake pan.
Put the first slice of cake in a cake form.
Coat it with about 100 g apple puree.
Cover with a Marzipan sheet.
Top about 1/3 of the cream filling on it.
Put the second cake base in the mold.
Sprinkle with the remaining apple puree and with the raisins.
Now cover with the second Marzipan sheet.
Apply the second third of the cream filling.
Top it with the third slice of cake base.
Carefully remove the cake form.
Apply the remaining cream on the outside of the cake.
To cover the cake, roll out red coloured Marzipan paste thinly,
Cut it to the cake height with a ruler and lay around the cake.
For the top of the cake, roll out thinly natural or white-coloured Marzipan paste.
Cut out a generously proportioned cover with undulated edges.
Carefully place it on the cake and gently firm down.
Form a roll (1 cm thick) out of green Marzipan paste and place it around the bottom edge of the cake.
To decorate with Christmas trees, form 3-5 cones (8 – 10 cm high) out of green Marzipan paste.
Use scissors to make small cuts around the cones and slightly lift the "twigs".
Additional Marzipan Christmas creations (available in our online shop) can be placed on the cake using toothpicks.
Use sugar decoration mixture to support fixing the items and to create additional ornaments (colorized with red food colorants).
To finalize, sprinkle with sugar powder.
